Much like the rest of Mexican cuisine, Oaxacan food consists of traditional staples such as corn, beans and chile peppers in addition to other well-known ingredients including chocolate, mescal, Oaxaca cheese and "chapulines" (grasshoppers). On a visit to famed Oaxacan-chef Alejandro Ruiz Olmedo's cooking school, you'll be introduced to this regional style of cooking during a live cooking demonstration followed by a family-style dinner that offers you a delectable sampling of authentic Oaxaca gastronomy.

A choice of activities offers you a visit to the UNESCO World Heritage Site of Monte - one of the most famous archeological sites in Mexico (as well as one of its hidden gems, literally!). Untouched by European explorers until its discovery by a local farmer in the 1930s, Monte Albán's origins date back over 2,500 years ago as a socio-political and economic epicenter of the ancient Zapotec civilization. Known for its unique carvings or danzantes, many of the sites you'll see during your visit here such as its pyramids, terraces, canals and ball courts were all carved out of the nearby mountain and remain today as a well-preserved example of Mesoamerican history.

The dreamy and fantastical folk art of Alebrije

Craft your own vibrant alebrije at a local workshop

Translated to "fantasy" or "imaginary," alebrija are wooden figures designed to look like animals or mythical creatures traditionally painted in colorful designs and styles. According to legend, Mexican artist Pedro Linares fell ill one day and during a fever dream he hallucinated a forest consisting of rocks, trees and clouds that transformed before his very eyes into various chimeras. Today, alebrije carving/sculpting has become an important part of Oaxaca's economy and you'll have an exciting opportunity to create your own alebrije while at a local studio.
